Find out what's happening in Apple Valley-Rosemountwith free, real-time updates from Patch.

We woke up early this morning and ready for some new scenery. We loaded up the bus with all of our stuff and took off to Carcasonne! Side note: I finally figured out how to open our door in less than ten seconds…a major accomplishment.

We arrived in Carcasonne around lunch-time and saw the walled city. It was definitely something that you don’t see everyday. It looked like a castle/fortress or something from the medieval times. It was gorgeous and we were all awestruck. The walled city was literally right up the hill from our hotel, a five minute walk.

We put all of our things in our hotel rooms, which, the hotel was beautiful. It was very modern and totally my style. We then walked up to the city and took so many pictures. The castle was so majestic and we couldn’t believe it. Inside the walls were a bunch of shops, restaurants and people. We found a place to eat right away, with pizza, burgers and beer. We love the food here, but everyone was craving a good American lunch. We had French fries, so that was our French addition to our meals.

We basically had the whole afternoon to walk around the city and explore and it was amazing! The choir was there too and they had quite a bit more free time than they were used to, which they loved! Some of our favorite shops included the chocolate shop, wine and cheese shop, and the t-shirt shop of course! We all bought plenty of souveignours and were starting to try and figure out how we were going to get all of our stuff back to the states.

Along with the shops was a beautiful cathedral. It was incredible. So many stained glass windows on the inside and beautiful decorations on the outside. Some of the kids said that it started bringing tears to their eyes as soon as they walked in. We were really excited because after dinner, we were going to get to come back to the same cathedral and watch the kids sing there.

We walked back to the hotel after a beautiful day in the city and ate dinner. Crème Brulee was our dessert. Lets just say, no one complained. It was superb. We all got ready and headed back up to the city and cathedral. We talked about how we felt somewhat normal walking into the castle again, like its an everyday thing. Man, are we going to get a reality check when we come back to Rosemount!

The choir sang and it was beautiful. There was barely any lighting in the cathedral and the students were all dressed in black. The light fell nicely on them and it was almost surreal. Another great concert by the RHS choirs.

After talking with sons and daughters after the concert, we headed back to the hotel and sat on their beautiful patio and had wine, cheese, garlic and olives. It was a great end to a beautiful day! We were all talking about how much fun we have had this trip and how fast it is going by!

We are headed to Spain tomorrow, which I am super excited about. I have a Spanish minor, so we will see how far it gets me! Until tomorrow in Spain!
