Ribbon Cutting Held for Las Tortillas Mexican Restaurant

The City of Rosemount welcomes Las Tortillas to its community.

The held a ribbon cutting ceremony for Las Tortillas Mexican Restaurant Thursday afternoon.

Mayor Bill Droste gave Owner Ryan McGunnigle a welcome letter as well as "First Dollar in Rosemount" plaque for the restaurant.

Las Tortillas is owned by McGunnigle and his wife, Jen. The restaurant boasts 65 seats and has been open since May 18. So far, it has been very popular with the community.

"We've kind of filled this place up since we opened," McGunnigle said. "The goal is to keep people coming back and back and back."

The new restaurant is run by McGunnigle and Chef Ricardo Carmona, who have worked together for six years. “Ricardo and I have a good working relationship. It’s worked out real well,” said McGunnigle . “We also do catering.”

"We know it's a tough economy [right now]. However, it shows how important local economy really is ... [With the community] shopping and eating local, we can turn [things] around," Droste said.
